Mindful Cuisine’s Spring Tapas-Style Dinner
Tapas are the small dishes served with drinks in Spanish bars. They are served one at a time and classically are just a bite or two for one or two people. While certain dishes are typically served in a tapas bar, tapas can be anything. The most defining characteristic is that the dishes are made from ingredients that are local and in season.
In this dinner, you will make a collection of traditional and modern Spanish-style dishes using seasonal ingredients. As in a tapas bar, dishes you make will be served one at a time on a shared platter for your group to enjoy. Each platter will contain a full portion for each guest, and the dishes you make and serve will collectively form a delicious meal. For the complete experience, bring a Spanish wine such as Tempranillo or Garnacha (Grenache) or a Spanish sherry.
